New Vegan Lunch Options Arrive at Michi-no-Eki Aso

🌿 A New Vegan Option Born in Aso

Aso is known for its breathtaking landscapes, hot springs, and flavorful local cuisine — especially the famous Akaushi (Aso Red Beef).
While many travelers enjoy rich regional dishes, those following a vegan or plant-based diet have often struggled to find suitable food options during their visit.

Recognizing this issue, students from IDEA IT College Kumamoto decided to take on the challenge.
Their goal was simple yet meaningful:
to create meals that everyone — including vegan and allergy-conscious visitors — can enjoy while experiencing the flavors of Aso.

That passion has now become reality.
Two new vegan lunch items are now available at Michi-no-Eki Aso.


🍱 Menu Highlights

Both options use no animal products — no meat, fish, eggs, dairy, or other animal-derived ingredients — and are made with local Aso ingredients that express the region’s natural richness.


🥪 Mori no Gochisou Sandwich

¥680 (tax included)

This hearty sandwich features a bold, crispy cutlet made from shiitake mushrooms grown in Aso.
It’s layered with locally sourced lettuce and tomato, vegan cheese, and vegan mayo, creating a satisfying and flavorful bite — even though it’s fully plant-based.

A delicious way to savor the gifts of Aso in one perfect sandwich. 🌟


🌱 Aso Vegan Roll

6 pieces — ¥500 (tax included)

A vibrant fresh spring roll-style dish packed with Aso-grown vegetables such as cabbage and carrots, paired with glass noodles, nuts, and other plant-based ingredients.
It’s colorful, refreshing, and fun to eat — with a delightful mix of textures.

You can enjoy it with two dipping sauces:
✔ Chili sauce
✔ Vegan sesame mayo
